The Summer Fancy Food Show, hosted by the Specialty Food Association at the Jacob K. Javits Convention Center in New York, showcased emerging food trends that echo the diets of early humans. This year’s highlights included the rising popularity of fish as the hottest protein, honey as a trending flavor, and game meat as a new charcuterie board staple. More than 2,400 companies exhibited their innovative food and beverage products to restaurant operators, specialty food retailers and trendspotters.

Honey took center stage as a favored ingredient in both food and beverages, praised for its health benefits. Exhibitors like Green Bee showcased honey soda, while Owl Creek Organics displayed honey spreads in various flavors. Dutch company Klepper & Klepper introduced honey-flavored licorice, highlighting honey’s versatility as a key flavor in modern culinary creations.

Tinned fish made a significant comeback, with a boost from TikTok trends last year. Exhibitors presented upscale versions of canned fish, such as Wildfish Cannery’s retro-designed sockeye salmon and Krill Arctic Foods’ nutrient-rich canned krill meat. Additionally, companies introduced convenient, on-the-go fish snacks, like Acme Smoked Fish’s Lox in a Box kits and Legend of Master International’s Kani fish cake sticks, catering to consumers’ desire for portable, protein-rich options.

Charcuterie boards also saw an upgrade, driven by social media trends. New offerings included black truffle-flavored salami from Tempesta Artisan Salumi and exotic meat options like elk and bison salami from Driftless Provisions. Pairing snacks were another highlight, with companies like Wine Chips and The Drinks Bakery introducing snacks specifically designed to complement alcoholic beverages, enhancing the overall dining experience.
